چکیده

Over 90% of phytic acid has been removed from full-fat soy flour by a lipid-protein concentrate process previously reported in 1974 by the Northern Regional Research Center. In the current study, parameters for optimizing phytic acid removal were evaluated. By changing both the molar concentration of the calcium chloride solution used and the pH of the initial acid slurry, various amounts of phytic acid and mineral elements were recovered in the acidprecipitated curd. A mathematical treatment of the data using multiple regression analusis showed phytic acid removal possible from 10 to 90');, zinc recovery from 10 to 90');" and calcium concentrations equalling twice that of the original starting t1our. All variable conditions introduced into the process had no effect on protein (90..937;), fat (98-100')0), and iron (94-96%) recoveries. The results presented in this report can be applied to a large number of processes now being used for making edible soy proteins. and the reby low phytin-containing products CaI~ be acheived.

Compositional changes in trypsin inhibitors, phytic acid, saponins and isoflavones related to soybean processing.

Soybeans are high in protein but also contain a number of minor constituents traditionally considered to be antinutritional factors. These include trypsin inhibitors, phytic acid, saponins and isoflavones. These compounds are now thought to have beneficial biological effects in the diet, such as lowering blood cholesterol or preventing cancer. Soybean processing changes the content of these min...

Production of aflatoxin on soybeans.

Probable factors influencing resistance to aflatoxin synthesis in soybeans have been investigated by using cultures of Aspergillus parasiticus NRRL 3240. Soybeans contain a small amount of zinc (0.01 mug/g) bound to phytic acid. Autoclaving soybeans at 15 pounds (6803.88 g) for 15 min increases the aflatoxin production, probably by making zinc available. Addition of zinc to both autoclaved and ...

Vegetable protein sources for carnivorous fish:potential and challenges

In this review we describe how carnivorous fishes respond to vegetable protein feedstuffs. The amino acid profiles of gluten and soy products are complementary with respect to amino acid profile, and hold promise for further development of processing to increase protein contents and improve nutritional qualities. Soybeans are rich in antinutritional factors that disturb the digestion and/or phy...

Dephytinisation of soyabean protein isolate with low native phytic acid content has limited impact on mineral and trace element absorption in healthy infants.

Infant formulas based on soyabean protein isolate are often used as an alternative to cows'-based formulas. However, the presence of phytic acid in soya formulas has raised concern about the absorption of trace elements and minerals from these products. The aim of the present study was to evaluate mineral and trace element absorption from regular and dephytinised soya formula in healthy infants...

The timing and rate of phytic Acid accumulation in developing soybean seeds.

The time-course of phosphorus (P) accumulation in the phytic acid fraction of developing soybean (Glycine max [L.] Merr. cv ;Williams 79') seeds as well as the relation of phytic acid P to total P content were determined. Phytic acid was detected early in embryogenesis in field-grown soybeans and accumulated in a linear fashion throughout most of seed development. Although the observed rates of...
